Culinary Arts & Hospitality
Mark D. Brucker, CEC, CCE

Experience: More than 26 years in the food service and hospitality industry, including five years as general manager of Sodexho Marriott Services at a health care facility and 11 years as assistant food service director for St. Mary's Hospital. 
 
Chef Brucker has worked for nearly 10 years for Schenectady County Community College in the Hotel, Culinary Arts and Tourism department as an adjunct faculty member teaching Computers for the Hospitality Industry, Food Preparation I and II. He also has held several positions including sous chef and cook at local restaurants including Perrinos, Joe Collins, and Steak & Ale. 
He also served as Night Food & Beverage Manager at the (Desmond) Americana Inn for 2 years and Asst. Restaurant Manager and Beverage Coordinator at The Fontainebleu Hilton on Miami Beach for 1&1/2 years.

Professional certifications & licenses: NYS certified teacher;
American Culinary Federation Certified Executive Chef and Certified Culinary Educator; National Restaurant Association certified ServSafe instructor; National Restaurant Association ServSafe certified; National Restaurant Association Educational Foundation Hospitality Business Alliance Professional Development Institute Level III Mastery Certificate of Achievement

Education:  NYS teacher certificate, SUNY Oswego; B.S., Florida International University in Hotel/Restaurant Management; A.A.S., Schenectady County Community College in Hotel Tech

Professional, civic, community organizations: Member of New York State Restaurant Association and ServSafe Sanitation instructor; member of American Culinary Federation; active in International Council on Hotel, Restaurant and Institutional Education; adjunct instructor at Schenectady County Community College; guest speaker on culinary technology for 21st century and best practices in school-to-work/food services;
panel speaker at the 2003 International Hotel, Motel and Restaurant Show at The Jacob Javits Convention Center in NYC, Title was The World of Work: Sharing experiences and Advice; Schonowe Volunteer Fire Company; Rotterdam Little League
